Just came across this recipe. OH MY GOODNESS! I need to try this! Before I do I have a question. Where do you find mini rolos? How big is the bag? We have tubes of rolos but I think there are 7 in a tube – looks like you use more! Also the choclate drizzle you top the cheesecake with. Is this a bottle of drizzle or do you make it? Thanks
Susan says
I’ve got the same question about the Rolos. Want to know what size bag to use. I have seen them in the small snack size bag. Did you ever find out?

VAN PINX-Let them sit out for maybe 20 mins and then cut them all up! Chill again and before serving let them sit out again to soften the rolos. Glad you enjoyed them!!!

I am going to make these tonight but have one question. Can I use honey in place of the corn syrup? Thanks in advance for your reply.
DANIELLE says
SORRY, I HAVE NEVER TRIED IT WITH HONEY SO I AM NOT SURE ABOUT THAT.
Sheila Tupper says
Can you please tell us what kind of chocolate drizzle you used? Recipe for it. Also what size pan?
DANIELLE says
sure! i always drizzle with chocolate chips melted in a piping bag and the pan says 9×13. Hope u enjoy!
www.lindacunningham.scentsy.us says
What kind of chocolate chips?
Semi sweet or milk chocolate?
Also – for the top did you use half of a regular sized rolo or mini rolo?
DANIELLE says
SEMI SWEET AND I USED HALF A REGULAR ROLO 🙂
Deana Witt says
What about ur choco drizzle on top…what did u use for that???
danielle says
Just melted chocolate chips.
DTower says
Just made these last night. For the crust I used a mix of chocolate and regular graham cracker crumbs- turned out very well.
They taste SO good.
holly hendrix says
Made these today in my new apartment, had no microwave so drizzled with choc syrup(no glaze), put heath crumbs and a half a rolo.
holly hendrix says
They were a hit at birthday party I made them for.
John Pynaert says

Honey
HeidiT says
I am trying these now but it all fell apart at the glaze. Don’t know what I did wrong but the butter and the chocolate chips went all funny and grainy looking and started to harden. They didn’t go all runny and smooth even though I added the Light Corn syrup. What am I doing wrong I wasted an entire bag and got terrible results. I’m reluctant to buy another bag only to have them go funny again on me again. Ive used chocolate chips for other recipes and put them in the oven for a few minutes and they melted smoothly, should I skip the butter?
DANIELLE says
Heidi-sounds like the chips scorched from overheating in the microwave possibly? Heat at just 30 second intervals and stir.
Terry T says
Just made this for my son for Valentines day! Cant wait till tomorrow to try them 🙂
danielle says
OOOOh great pick for Valentine’s day! Hope you both enjoy them!!!!
Amy says
Looks tasty! Did you just use regular all-purpose flour in this recipe?
danielle says
yes, regular flour!!!
Nic Nic Cattell says
Hi can you email me the uk measurements please or let me know where to get them. Can’t wait to make these as the kids are on half term holidays at the moment . Thanx x
danielle says
Hello, maybe there is an online converter you can use?
Jakarta says
What size is the package of rolo used? We only have small bars of 7 pieces in Australia.
🙂
danielle says
12 ounces
First timer says
I’ve never made my own desserts but want to try this. How important is it to line the pan with foil?
danielle says
As long as you grease the pan you can skip it-I just LOVE nonstick foil for baking.
Luvz2Laugh says
After reading this recipe, I IMMEDIATELY began rummaging through pantry, to see what I have and what I need to buy. First time I’ve ever made a “grocery” run, just for a bag of Rolos. But you better believe, I’m about to! Can’t wait! Thank you so much! My neighbors are gonna LUV me! 🙂
danielle says
awwww this was awesome to read!!! Start baking them yet?
Kihi says
Wow, these look good…and fairly simple. Gotta try em
Rita says
I plan on making these they look delicious.
danielle says
Thank you, hope you love them too!!
Leah says
I also LOVE nonstick foil!!! Use for everything!! But, call.me a duh but doesn’t the foil
tear when you go to cut the bars? Last thing l want to do or anyone else is to bite into a small.piece of the foil!!
danielle says
hahaah yes the knife tears into it but i cut on a cutting board and just pick up each bar right off the foil as I cut-hope that makes sense 🙂
anna groth says
Why is t he drizzle lighter then the glaze? do you put the drizzle after chilling overnight? I had to make these tonight they look delicious
danielle says
The drizzle is just melted choc chips drizzled on. It is not the glaze. Hope yours came out great!!!!!
anna groth says
I will find out tomorrow afternoon
Carole says
Hi am in Scotland and really want to make the rolo cheesecake as it looks amazing , however I can substitute the crackers for biscuits however re the sticks of butter how many oz would that be as ours come in 8oz blocks, also 1c does that mean one cup and if so what size and finally rolo’s ours come in small packs about 10. In a pack so again how many as so want to make this as looks amazing. Thank you Carole x
danielle says
1 stick butter=4 ounces
1c-1 cup
I would buy a few packs of rolos and “eyeball” it 🙂
Carlia says

Nj Klemme says

Chloe says
I made these a few months ago and they were perfect! Yesterday I made them again, but I substituted mini reeses for the rolos and added peanut butter chips to the glaze. Sooo good!
Debbie says
Do you think i could make this but in a mini cheesecake pan?? would love to be able to freeze in single portions 🙂
Beura says

Hugs & Cookies xoxo says

Susan says
I just want to make sure I’ve got this right…
Bake crust then remove from oven and spread with filling before cooling? Don’t cook the bars anymore, right? Make glaze and pour on “hot? or chilled? bars.
Sorry about the dumb questions. ????
Hugs & Cookies xoxo says
not dumb, you rebake the filling-was error on this post for some reason-sorrrry
Susan says
Thx. I didn’t think I re-baked it, but wanted to be sure. Also, do I spread the glaze on after the bars are cooled, or right after I spread the filling on?
Hugs & Cookies xoxo says
Bake the crust, ass filling, rebake with the filling to cook it, cool, add glaze
Susan says
Gotcha! Excited to make them!
Thx!
Susan
CynHalverson says
