No-Bake Cherry Cheesecake Cookie Lasagna
Cherries, cheesecake and cookies combine together for a wonderful dessert lasagna. The no-bake directions make this perfect for summer barbecues when you don’t want to turn on the oven and heat up your house. This would even be a fabulous Christmas dessert since you can make it ahead of time and the colors are very festive. This would leave you free for the important tasks at hand on Christmas…wrapping last minute gifts. This dessert is also a show stopper because it looks beautiful when it is prepared. Be sure to use a clear loaf pan so you can see all of the layers. The beauty is definitely in the layers! Nilla wafers are the perfect choice of cookie in this dessert! I hope your family enjoys this dessert as much as mine did. Be prepared for everyone to ask you for the recipe. It is simple but delicious! You’ll Need:
Nilla Wafer Minis
Loaf Pan
Cherry Pie Filling
No-Bake Cherry Cheesecake Cookie Lasagna
Ingredients
- 5 mini bags Nilla Wafer Minis-or use regular sized Nilla Wafers
- 8 ounces soft cream cheese
- ⅓ cup sugar
- 8 ounce tub cool whip
- ½ cup cherry preserves
- 1 can cherry pie filling
Instructions
- Line a loaf pan with Nilla Wafers across bottom.
- In a mixer beat cream cheese and sugar.
- When smooth, beat in cool whip.
- Spread half the cheesecake mixture over the cookies gently.
- Stir the preserves to loosen them and dollop over the cheesecake mixture. Spread gently.
- Add another layer of Nilla Wafers and top with the rest of the cheesecake mix.
- Pour on the Cherry Pie Filling.
- Park in fridge overnight and serve with some whipped cream! YUM!

I substituted sugar for monk fruit and splenda mix, sugar free cool whip, and sugar free cherries pie filling. I’m sure low fat cream cheese will work as well.

I made this for dessert tonight, using a 8×8 Brownie pan. it only made enough for one layer of each items though, making quite an interesting cheesecake bar. i didnt use the jam, since i didnt have a second layer.
Hubby loved it! i used Cherry Pie Filling, and he loved the Nilla Wafers on the bottom for the crust!

I’m going to make it but I will be putting the cool whip in with the cream cheese and sugar. And will be using sugar free preserves strawberry! And fresh cut strawberries on top mixed with splenda to make them sweeter! This will cut back on the amount of sugar used.

I made this for my boss, he was leaving for surgery, it was very good, he said. I made him the cherry one, he shared it with a few guys at work they all loved it, then he asked me if I would make a blue berry one, so I did, a few of them liked that better. then his boss asked me to make a strawberry one so I did, it was good also, but not many strawberries in the can of pie filling so I would add more next time.. but haven’t made a apple one but will soon.

I have made this 2 times..the first time I used a loaf pan and made as directed. The 2nd time, I doubled the recipe and used a 9×13 glass casserole dish because I was serving a large group. Both times, the desert was a huge hit and got rave reviews!! It is definitely a keeper!

Wafers are the crust. Cream cheese, sugar and chill whip make up the cream cheese mixture/ taste. It is wonderful.
