Roasted Carrots
  • Carrots (I used colored ones!)
  • Olive oil
  • salt/pepper
  1. Peel carrots and trim ends.
  2. If large cut in half.
  3. Drizzle very generously with olive oil.
  4. Season with salt and pepper.
  5. Roast at 400 for 20-30 minutes until browned and softened.
