• 1 c. heavy cream
  • 8 ounces high quality chocolate chips (I used Callebaut)
  1. Heat cream just to a boil.
  2. Pour over chips and let sit 1 minute.
  3. Whisk smooth.
  4. Let cool to room temp and chill in fridge overnight.
  5. Use an ice cream scoop to make round truffles.
  6. Work quickly as the heat in your hands will start to melt the chocolate.
  7. Roll in powdered sugar or cocoa powder.
  8. Set on wax paper and serve!
