Balsamic Chicken Arugula Salad
 
Ingredients
  • 1½ pounds chicken cutlets, sliced very thin and trimmed very clean
  • 3 eggs, whisked
  • 2 cups bread crumbs for coating
  • olive oil for frying
  • ¼ cup fresh lemon juice
  • ½ cup olive oil
  • salt/pepper
  • avocado sliced
  • grape tomatoes
  • Trader Joe's Balsamic Glaze
Instructions
  1. Bread cutlets in egg then crumbs.
  2. Fry till lightly golden and cooked through.
  3. Let cool.
  4. Whisk lemon juice and oil.
  5. Season with s/p.
  6. Add avocado and tomatoes.
  7. Top with chicken and generously drizzle on the balsamic glaze.
