Chicken Sausage and Broccoli
  • 2 packages chicken sausage (I like premio), removed from casing
  • 1 T. olive oil
  • 1 small container sliced mushrooms
  • 4 cups fresh broccoli, cut into chunks
  • salt, paprika
  • 2 cups chicken stock/broth
  • ½ cup parmesan cheese
  1. Heat olive oil and add sausage.
  2. Break it up with a wooden spoon into bite size chunks.
  3. Cook on medium until browned and cooked through.
  4. Add mushrooms and cook to brown.
  5. Add salt and paprika to taste.
  6. Pour in broth and bring up to a boil.
  7. Whisk in parmesan cheese.
  8. Add broccoli, lower to a simmer and cover with foil to steam the broccoli.
  9. Add salt to season the broccoli.
  10. Serve over pasta or rice.
