Banana Bread Cheesecake
 
Ingredients
  • 4 very ripe bananas
  • ¼ cup vegetable oil
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
Cheesecake
  • 32 oz soft cream cheese
  • ½ cup sugar
  • 1 tablespoon vanilla
  • 1 cup milk
  • 1 tablespoon gelatin powder
Instructions
  1. Preheat the oven to 350°F (180°C).
  2. Mash the banana with a fork.
  3. Add the oil, egg, sugar, and vanilla.
  4. Add the flour, baking powder, baking soda, salt, and cinnamon.
  5. Stir to combine.
  6. Pour batter into greased 9-inch springform pan.
  7. Bake for 30-40 minutes, until the top is set.
Cheesecake
  1. In a mixer, beat cream cheese, sugar, and vanilla.
  2. Microwave the milk until hot, and add gelatin powder.
  3. Stir fast to dissolve gelatin. (stir 5 mins)
  4. Pour the gelatin mixture over the cream cheese and whisk smooth.
  5. Pour this cheesecake mixture over the baked banana bread crust.
  6. Chill for a minimum of 4 hours.
  7. Unmold the pan, slice and serve!
  8. I topped mine with chocolate dipped banana slices.
