No Bake Chocolate Chip Oreo Ganache Cheesecake
 
Ingredients
Crust
  • 14 ounces Oreos, processed in food processor
  • 8 T. salted butter melted
Ganache
  • 1 c. chocolate chips
  • ⅓ c. heavy cream
Cheesecake filling
  • ½ cup heavy cream
  • 20 ounces cream cheese, room temp
  • ½ cup powdered sugar
  • ½ cup sour cream
  • 1 tsp vanilla
  • ½ cup mini chocolate chips
ganache topping
  • ¼ cup + 2 T. heavy cream
  • 1 cup chocolate chips
Decoration-optional
  • fresh whipped cream
  • 5 Oreos, cut in half plus 3 chopped Oreos
  • ¼ c. chocolate chips
  • chocolate sauce for drizzle
Instructions
Crust
  1. Mix butter and cookie crumbs.
  2. Spray 9 inch springform pan with nonstick spray.
  3. Press crumbs into the bottom and up the sides.
  4. Chill in fridge 30 mins.
Ganache
  1. Heat cream in microwave safe bowl to almost a boil.
  2. Add chips and cover with a paper towel for one min.
  3. Stir smooth and spread on crust.
  4. Chill again 30 mins.
Cheesecake Filling
  1. Beat cream to stiff peaks and set to the side.
  2. Beat cream cheese smooth.
  3. Add sugar and mix.
  4. Add sour cream and vanilla.
  5. Fold in the whipped cream and chips.
  6. Pour over ganache in the crust.
  7. Cover and freeze 2 hours.
ganache topping
  1. Heat cream in microwave safe bowl to almost a boil.
  2. Add chips and cover with a paper towel for one min.
  3. Stir smooth and spread on the cold cheesecake.
  4. Freeze 10 minutes.
  5. Remove sprinform sides and transfer to cake plate if desired. (I loosened bottom wit a sharp knife)
Decorate
  1. Pipe on whipped cream, top with Oreos, drizzle on sauce, chips and chopped Oreos
