Super Stuffed Omelette
  • 2 T. butter, divided
  • 6 slices honey maple turkey (Or any kind you like), chopped
  • ⅓ red onion diced
  • 2 scallions sliced
  • 8 eggs
  • 2 T. half and half
  • salt/pepper
  • handful chives, chopped for garnish
  • ¼ c. Monterey Jack cheese
  • 3 slices bacon, crispy and chopped
  1. Heat 1½ T. butter in 8 inch skillet.
  2. When melted, saute turkey, onion and scallions until turkey starts to brown.
  3. Add the rest of butter and let melt.
  4. Whisk egg/cream and season with salt, pepper.
  5. Pour over the goodies in the pan.
  6. Cook on medium pushing the edges in a bit so the runny egg moves to the edges.
  7. Once it sets up, the middle won't be fully cooked yet.
  8. Cover the pan a few minutes until it is cooked to your liking.
  9. Slide onto a plate and fold in half as it leaves the skillet.
  10. Top with cheese, chives and bacon.
  11. Serve with avocado slices and add salt/pepper as needed!
