Fruity Pebbles Cheesecake
  • ¾c. graham cracker crumbs
  • ½ T. sugar
  • 3 T. melted butter
  • *Note: for a thicker crust going up the sides, you can double the ingredients
  • 2 T. fruity pebbles
  • 24 ounces soft cream cheese
  • 1¼c. sugar
  • 3 T. cornstarch
  • 1½ tsp. vanilla
  • 2 eggs
  • ½c. plus 1 T. heavy cream
  • 1 c. Fruity Pebbles cereal
  1. Preheat oven 350. Grease a 6x3 inch pan with removable bottom with Pam and line with parchment.
  1. Combine ingredients and press into the bottom of pan.
  2. Bake 8 minutes and let cool. Sprinkle 2 T. cereal on crust.
  1. Beat cream cheese on low until smooth.
  2. Beat in sugar, cornstarch and vanilla.
  3. Add eggs, scraping down sides as needed.
  4. Pour in cream and mix just until combined.
  5. Pour over cooled crust alternating with layers of cereal.
  6. Top layer should be a sprinkling of Fruity Pebbles.
  7. Place in cheesecake moat or create a water bath.
  8. Bake 1 hour and then shut oven off leaving cheesecake in the oven for an additional 45 minutes.
  9. Then crack door open for another 45 mins.
