Sausage and Spinach Quiche
- 1 box puff pastry, defrosted and each rectangle rolled out larger to fit 9 inch springform pan.
- 10 ounces ricotta cheese
- 1 package sweet Italian sausage, baked 20 minutes (not fully cooked) and sliced
- 16 ounces mozzarella cheese
- 10 ounces frozen chopped spinach (defrosted and well drained)
- 1 red pepper, chopped
- salt/pepper to taste
- 6 eggs
- Spray 9 inch springform with Pam.
- Preheat oven to 400.
- Lay one rolled out puff pastry into the pan.
- Mix all and pour into the bottom crust.
- Top with second puff pastry and seal edges.
- Brush top with egg.
- Bake 1 hour.
- Cool before slicing.
