Sausage and Spinach Quiche
 
Ingredients
  • 1 box puff pastry, defrosted and each rectangle rolled out larger to fit 9 inch springform pan.
Filling
  • 10 ounces ricotta cheese
  • 1 package sweet Italian sausage, baked 20 minutes (not fully cooked) and sliced
  • 16 ounces mozzarella cheese
  • 10 ounces frozen chopped spinach (defrosted and well drained)
  • 1 red pepper, chopped
  • salt/pepper to taste
  • 6 eggs
Egg wash
  • 1 beaten egg
Instructions
  1. Spray 9 inch springform with Pam.
  2. Preheat oven to 400.
  3. Lay one rolled out puff pastry into the pan.
Filling
  1. Mix all and pour into the bottom crust.
  2. Top with second puff pastry and seal edges.
  3. Brush top with egg.
  4. Bake 1 hour.
  5. Cool before slicing.
