Roasted Olive Feta Dip
Roasted Olives
  • 2 cups mixed olives, make sure they are pitted
  • ⅓ c. olive oil
  • 6-8 cloves garlic, smashed
  • 1 shallot, quartered
  • 1 lemon, quartered
  • 2 sprigs fresh Rosemary
  • 8 ounce block of feta cheese
  • 3 ounces softened cream cheese
  • ½ T. honey (add more if you like-up to 3T. but we found that too sweet for us)
  • black pepper
  1. Preheat the oven to 450° F.
  2. Place olives, oil, garlic, shallots, lemons and Rosemary in a baking dish and bake 20-25 minutes until bubbly.
  3. While that bakes, place the feta ingredients in a mixer and beat until smooth and creamy.
  4. Scoop the feta into your serving dish and pour all of the olives on top!
  5. Serve with crostini or pita crackers.
