Birthday Cake Oreo Stuffed Cookies
  • 230 grams cold butter, cut in pieces
  • 100 grams caster sugar (I found this at whole foods-or you can food process sugar)
  • 160 grams light brown sugar
  • 200 grams caramelized white chocolate, then rechilled and chopped
  • 300 grams white chocolate chips (Use high quality)
  • 400 grams all purpose flour
  • 100 grams self rising flour (I make own and measure from this batch: 2 cups flour, 3 tsp. baking powder, ½ tsp salt)
  • 1 tsp kosher salt
  • 2 tsp baking powder
  • 90 grams sprinkles
  • 2 eggs
  • 1 yolk
  • ½ tsp vanilla extract
  • 1 Oreo per cookie
  • (confetti shaped sprinkles for the tops)
  1. The mixing order on this cookie is also unique!
  2. Mix butter just to break it down.
  3. Add sugars and mix just to combine-not cream.
  4. Add both white chocolates and mix.
  5. Add all the dry ingredients and stir, including sprinkles.
  6. Mix eggs and vanilla in a bowl and add last just until dough all comes together in mixer.
  7. Weigh out balls of 125 grams and encase the dough around your Oreo, sealing them well.
  8. Sprinkle confetti sprinkles on top.
  9. Bake at 400 for 13 mins on a parchment lined jellyroll pan.
  10. Cool on pan so they can set up for at least 30 mins.
