Double Chocolate Peanut Butter Stuffed Cookies
  • 1 cup cold butter cubed
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • ⅔ cup dark chocolate chips
  • ⅔ cup peanut butter chips
  • ½ cup black baking cocoa
  • 2½ cup flour
  • 1 teaspoon cornstarch
  • ¾ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 eggs
  • 9 Tablespoons peanut butter (1 for each cookie)
  • I weighed out eight 5-ounce cookies and had one 4-ounce cookie.
  1. Beat butter to break it up.
  2. Add sugars and beat until crumbles, not creamed.
  3. Add chocolate and peanut butter chips to combine.
  4. Add dry ingredients and blend well until resembles sand.
  5. Beat eggs and add, mixing until dough forms together.
  6. Weigh into 5 ounce cookies.
  7. I was able to form eight 5-ounce cookies and had one 4-ounce cookie.
  8. Flatten the dough, adding peanut butter to the center and carefully fold the dough around it so it is all encased and doesn't leak out.
  9. Bake at 400 12-14 mins on parchment lined jellyroll pans.
  10. Let cool on sheet pan.
