Pumpkin Muffins With Chococlate Chip Cheesecake Filling
 
Ingredients
  • 1 cup sugar
  • ⅓ cup vegetable oil
  • 1 cup pumpkin puree
  • 2 eggs
  • ¼ cup milk (not skim)
  • 2 teaspoons pumpkin pie spice (optional)
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups sifted all-purpose flour
Filling
  • 8 ounces cream cheese, softened
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 1 cup mini chocolate chips
Instructions
  1. Preheat oven to 350°.
  2. Line muffin tins with liners
  3. Whisk pumpkin, oil, and sugar.
  4. Add eggs, pumpkin pie spice (if using), salt, and baking soda.
  5. Add milk.
  6. Fold in flour.
  7. Pour into muffin pans filling each ½ full.
  8. Prepare filling by mixing the cream cheese, sugar and vanilla.
  9. Fold in chips.
  10. Place 1 tablespoon onto the top of each muffin.
  11. Bake for 15-18 minutes.
  12. Cool a few minutes in the pan.
  13. Keep left overs in fridge.
