Apricot Honey Pulled Chicken
  • Ingredients:
  • 5 pounds chicken (I used combo drumsticks and bone-in thighs)
  • ½ cup honey
  • ½ cup Tamari (or soy sauce)
  • ¼ cup Apricot jam
  • 2 Tablespoons olive oil
  • 3 cloves garlic, minced
  • Sliced scallions, for garnish
  • Shredded cheese and red onion for topping (optional)
  1. Place all the chicken in the crockpot.
  2. In a bowl, whisk honey, tamari, jam, olive oil & garlic.
  3. Pour the sauce over the chicken.
  4. Cover the crock pot and cook the chicken on high for 5 hours.
  5. Carefully remove all of the chicken to a plate.
  6. Remove skin/bones and using 2 forks, shred the chicken.
  7. Put the chicken in a bowl.
  8. Pour some liquid from crockpot over the chickne using a strainer.
  9. Top with scallions, red onion and cheese
  10. Serve over rice or with nachos.
