Shrimp and Bacon Brussels Pizza

Ingredients
  

  • 1 pizza dough I like this homemade one the best
  • olive oil
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 1 small shallot thinly sliced
  • 2 cloves garlic grated
  • kosher salt and black pepper
  • 1 ½ cups shredded brussels sprouts
  • ½ cup grated manchego cheese
  • 1 ½ cups shredded fontina or Havarti cheese Both amazing
  • Optional: Grilled shrimp
  • 4 thick-cut slices of bacon cooked and chopped
  • fresh parmesan cheese shaved
  • optional: avocado slices garnish

Instructions
 

  • Preheat the oven to 500° F with a pizza stone in the oven.
  • In a small bowl, combine 1 tablespoon olive oil, honey, balsamic vinegar, shallot, garlic, and a pinch of salt and pepper.
  • In another bowl, combine 1 tablespoon olive oil, brussel sprouts, manchego, salt/pepper.
  • Lay dough on parchment and roll into a circle.
  • Brush dough lightly with oil and bake 7 - 9 mins to give it a head start for a crisp crust. (If you do not want a crispy crust, skip this prebake.)
  • Remove from oven and brush with the honey/baslsamic mixture.
  • Add the havarti, shrimp if using and add the brussels.
  • Bake about 8-11 mins or until cheese has melted. (Keep an eye on it the first time so it doesn't burn.).
  • Top with bacon, parmesan and avocado if using.
