Preheat the oven to 500° F with a pizza stone in the oven.
In a small bowl, combine 1 tablespoon olive oil, honey, balsamic vinegar, shallot, garlic, and a pinch of salt and pepper.
In another bowl, combine 1 tablespoon olive oil, brussel sprouts, manchego, salt/pepper.
Lay dough on parchment and roll into a circle.
Brush dough lightly with oil and bake 7 - 9 mins to give it a head start for a crisp crust. (If you do not want a crispy crust, skip this prebake.)
Remove from oven and brush with the honey/baslsamic mixture.
Add the havarti, shrimp if using and add the brussels.
Bake about 8-11 mins or until cheese has melted. (Keep an eye on it the first time so it doesn't burn.).
Top with bacon, parmesan and avocado if using.
