Salmon with Fried Rice

Ingredients
  

Brussel Sprouts

  • 2 pounds sprouts
  • 3 T. Avocado oil
  • salt/pepper to taste

Salmon

  • salt and pepper
  • 1 T butter

Fried Rice

  • dark sesame oil
  • 4 eggs
  • 2 sliced onions
  • soy sauce/tamari
  • 20 ounces brown rice

Instructions
 

Brussel Sprouts

  • Trim off the bottoms and peel off the outer few leaves.
  • Toss with Avocado oil, salt & pepper and roast at 375 for 30 mins.  

Salmon

  • Season with salt/pepper.
  • Top with butter.
  • Broil 11 minutes.

Fried Rice

  • Heat some oil. (Toasted sesame is my fave)
  • Scramble 4 eggs.
  • Add sliced onions.
  • Add 20 ounces cooked brown rice and soy sauce/Tamari
