Dijon Roasted Chicken Breasts

Ingredients
  

  • 3 skin-on boneless chicken breasts seasoned with salt/pepper/garlic/smoked paprika
  • 2 T. olive oil
  • A pat of butter for each breast

Pan Sauce

  • 1 T. butter
  • 1 shallot chopped
  • 1 ½ cup chicken broth
  • 2 tsp. dijon mustard
  • 2 T. heavy cream
  • 1 T. butter
  • ½ lemon squeezed half sliced

Instructions
 

  • Preheat oven to 450℉
  • Heat oil in an oven safe skillet until HOT.
  • Add seasoned chicken skin side down and cook 5 mins. undisturbed to sear.
  • Flip chicken and cook a few mins to brown that side, too.
  • Add pat of butter to each breast and place skillet in the oven until internal temp is 165. Mine were done in about 8-10 mins.
  • Remove skillet and place chicken on a plate, loosely cover with foil.

Pan Sauce

  • Wipe out excess oil from skillet (Leave a little) and add a Tablespoon of butter.
  • Heat skillet on stove and add shallots for a few mins.
  • Deglaze with broth and let it reduce.
  • Whisk in mustard, cream, butter, lemon and continue cooking until reduced and delish.
  • Season with salt/pepper.
  • Slice chicken on a diagonal and lay in pan.
  • Garnish with lemon slices.
