Pesto Chicken With Orzo

Ingredients
  

  • 1 pound boneless skinless chicken tenders
  • 2 T. extra virgin olive oil plus extra for cooking
  • 1 T. cajun seasoning or chipotle
  • ½ cup basil pesto

Orzo

  • 1 pound Orzo
  • cup lemon juice fresh
  • cup olive oil
  • optional" stir in a little fresh pesto, too!
  • Cubed cheese of your choice fontina or havarti
  • fresh basil and parsley chopped

Instructions
 

  • Marinate the chicken in oil, seasoning and pesto for 15 mins.
  • Heat olive oil in cast iron pan and cook chicken a few minutes on each side.
  • Remove to a plate and wrap in foil to rest.
  • Cook orzo and drain.
  • Pour on the lemon juice and oil.
  • Top with the chicken, cheese parsley, and basil.
  • Can be served at room temp!
