Pesto Chicken With Orzo
This fabulous dish is perfect when you need a dish to feed a crowd. You can swap out the chicken for shrimp/steak or add all 3! I like to use a cast iron skillet to cook this chicken as the marinade made a mess in my grill pan! You can buy the pesto for this but I do find homemade to be a bit better!

Pesto Chicken With Orzo
Ingredients
- 1 pound boneless skinless chicken tenders
- 2 T. extra virgin olive oil plus extra for cooking
- 1 T. cajun seasoning or chipotle
- ½ cup basil pesto
Orzo
- 1 pound Orzo
- ⅓ cup lemon juice fresh
- ⅓ cup olive oil
- optional" stir in a little fresh pesto, too!
- Cubed cheese of your choice fontina or havarti
- fresh basil and parsley chopped
Instructions
- Marinate the chicken in oil, seasoning and pesto for 15 mins.
- Heat olive oil in cast iron pan and cook chicken a few minutes on each side.
- Remove to a plate and wrap in foil to rest.
- Cook orzo and drain.
- Pour on the lemon juice and oil.
- Top with the chicken, cheese parsley, and basil.
- Can be served at room temp!
