Garlic Lemon Shrimp

Ingredients
  

  • 5 T. butter
  • 2 T. olive oil
  • 4 garlic cloves chopped
  • 4 anchovies
  • 1 ½ lbs jumbo shrimp peeled/deveined
  • 1 c. white wine
  • ½ c. chicken broth
  • 2 cans chopped clams one with the liquid, one without
  • 1 lemon juiced and 1/2 zested
  • 1 lemon sliced
  • ¼ c. parmigiano reggiano cheese
  • heavy cream a splash
  • ½ cup orzo
  • chopped parsley
  • salt/pepper to taste

Instructions
 

  • In a large skillet, melt butter and oil.
  • Add garlic and anchovies and stir to melt anchovies.
  • Add shrimp and cook on both sides then remove to a plate.
  • Add wine, broth and clams/clam juice, lemon juice and let simmer.
  • add a splash of cream and cheese
  • Add orzo and let cook 7-10 mins.
  • Return shrimp to pan.
  • Add a sprinkle of salt/pepper and top with parsley and lemon slices.
