Shrimp with Sun Dried Tomato Orzo

Ingredients
  

  • 1 ½ pounds jumbo shrimp peeled/deveined
  • paprika garlic powder, kosher salt
  • olive oil
  • 1 shallot chopped
  • 2 cloves garlic chopped
  • ½ cup oil-packed sun-dried tomatoes chopped
  • 4 cup chicken broth
  • 2 teaspoons dijon mustard
  • ½ pound dry orzo pasta
  • ½ cup heavy cream
  • 1 cup grated parmesan
  • fresh basil optional or parsley

Instructions
 

  • Season shrimp with paprika, garlic and salt.
  • In a large skillet, heat 1 -2 T oil and cook the shrimp a few minutes on each side.
  • Remove shrimp to a plate.
  • Add the shallots and garlic.
  • Add sun-dried tomatoes cooking 2 more mins.
  • Add broth and mustard.
  • Bring up to a boil and add orzo 7-10 mins.
  • Add cream and cheese.
  • Stir and return shrimp to pan for a few mins.
  • Top with basil or parsley.
