Shrimp with Sun Dried Tomato Orzo
Need to fancy up your dinner rotations? I’ve got you covered with this creamy shrimp dish. This is a delicious and rich dinner in a wonderful sauce. The sun-dried tomatoes add awesome flavor as well as the addition of heavy cream. I used shrimp but you could use chicken if you prefer! I like to buy my shrimp at Costco, it is always delicious. If you want to use less cream, you could probably reduce it and a bit and it will still be wonderful. You may also love Summer Orzo Salad!
You may need:
A Large Skillet
Shrimp with Sun Dried Tomato Orzo
Ingredients
- 1 ½ pounds jumbo shrimp peeled/deveined
- paprika garlic powder, kosher salt
- olive oil
- 1 shallot chopped
- 2 cloves garlic chopped
- ½ cup oil-packed sun-dried tomatoes chopped
- 4 cup chicken broth
- 2 teaspoons dijon mustard
- 1 pound dry orzo pasta
- ½ cup heavy cream
- 1 cup grated parmesan
- fresh basil optional or parsley
Instructions
- Season shrimp with paprika, garlic and salt.
- In a large skillet, heat 1 -2 T oil and cook the shrimp a few minutes on each side.
- Remove shrimp to a plate.
- Add the shallots and garlic.
- Add sun-dried tomatoes cooking 2 more mins.
- Add broth and mustard.
- Bring up to a boil and add orzo 7-10 mins.
- Add cream and cheese.
- Stir and return shrimp tp pan for a few mins.
- Top with basil or parsley.
