Summer Orzo Salad
This Summer Orzo Salad is so versatile! You can serve it as a delicious side dish or it make it the star of your dinner. We love to serve this topped with grilled shrimp, barbecued steak or grilled chicken. Even great with all 3 on top! This dish feeds a lot of people or can store in the fridge as a side dish all through a busy work week! That is definitely a time saver for the week. You can also add roasted veggies to this dish (cauliflower, broccoli, peppers, onions) and some feta cheese or fresh mozzarella. You can also sweeten it up with some fresh berries, grapes or dried cranberries. I like to toast the pine nuts for this dish to bring out the nutty flavor! The possibilities are endless so follow your taste buds and fancy this up to meet your family’s taste buds! Yo may also love Loaded Orzo Salad or Bourbon Shrimp! This dish is also so versatile that you can top it with anything you love to bb like these filet mignons sliced thin!
You may need:
Lemon squeezer
Toasted Pine Nut Orzo Salad
Ingredients
- 1 lb orzo cooked and drained
- ⅓ c. olive oil
- ⅓ c. fresh lemon juice
- salt/pepper to taste
- 1 bunch scallions chopped
- ½ cup pine nuts or more, toasted in a dry skillet until golden
Instructions
- While orzo is hot, combine oil/lemon and pour on top.
- Stir and season with salt/pepper to taste.
- Mix in scallions and pine nuts.
