Blueberry Muffin Top Cookies

Ingredients
  

  • 1 cup salted butter
  • cup light brown sugar
  • cup granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 T. blueberry jam
  • ¾ cup fresh blueberries

Streusel topping

  • cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ½ teaspoon cinnamon
  • 3 T. cold butter cubed

Instructions
 

  • Preheat the oven to 350° F.
  • Line a cookie sheet with parchment paper.
  • Cook the butter in a skillet to lightly brown.
  • Remove to a heat safe bowl and let cool a few minutes.
  • Whisk into the browned butter the sugars, eggs and vanilla.
  • Add flour, soda, salt.
  • Gently swirl in the jam and blueberries not combining all the way.

Streusel

  • Mix all ingredients until crumbly.
  • Scoop Tablespoons of dough onto parchment and top with streusel.
  • Bake approx 12 mins.
  • Serve warm with a dusting of powdered sugar.
