Blueberry Muffin Top Cookies
Ingredients
- 1 cup salted butter
- ⅔ cup light brown sugar
- ⅓ cup granulated sugar
- 2 eggs
- 1 tablespoon vanilla extract
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- 2 T. blueberry jam
- ¾ cup fresh blueberries
Streusel topping
- ⅓ cup all-purpose flour
- ¼ cup packed light brown sugar
- ½ teaspoon cinnamon
- 3 T. cold butter cubed
Instructions
- Preheat the oven to 350° F.
- Line a cookie sheet with parchment paper.
- Cook the butter in a skillet to lightly brown.
- Remove to a heat safe bowl and let cool a few minutes.
- Whisk into the browned butter the sugars, eggs and vanilla.
- Add flour, soda, salt.
- Gently swirl in the jam and blueberries not combining all the way.
Streusel
- Mix all ingredients until crumbly.
- Scoop Tablespoons of dough onto parchment and top with streusel.
- Bake approx 12 mins.
- Serve warm with a dusting of powdered sugar.
