Toasted Pine Nut Orzo Salad

Ingredients

lb
orzo
cooked and drained
⅓
c.
olive oil
⅓
c.
fresh lemon juice
salt/pepper to taste
1
bunch scallions
chopped
½
cup
pine nuts
or more, toasted in a dry skillet until golden
Instructions
While orzo is hot, combine oil/lemon and pour on top.
Stir and season with salt/pepper to taste.
Mix in scallions and pine nuts.
