Toasted Pine Nut Orzo Salad

Ingredients
  

  • 1 lb orzo cooked and drained
  • c. olive oil
  • c. fresh lemon juice
  • salt/pepper to taste
  • 1 bunch scallions chopped
  • ½ cup pine nuts or more, toasted in a dry skillet until golden

Instructions
 

  • While orzo is hot, combine oil/lemon and pour on top.
  • Stir and season with salt/pepper to taste.
  • Mix in scallions and pine nuts.
