White Chocolate Candy Bark

Ingredients
  

  • 16 ounces high quality white chocolate Callebaut, chopped
  • ½ cup whole shelled salted/roasted pistachios
  • ¼ cup dried cranberries
  • ¼ cup medium-diced dried apricots

Instructions
 

  • Melt 3/4 of the chocolate in a double boiler.
  • Once melted, remove heat and stir in the rest of the chocolate stirring until melted.
  • Line a pan with parchment and pour on the chocolate into a large rectangle.
  • Sprinkle on the apricots, cranberries and pistachios.
  • Chill and break into pieces.
