Brown Butter Chocolate Chip Sea Salt Cookies

Ingredients
  

  • 185 grams of chilled brown butter Melt 2 sticks unsalted butter in a pan until browned, chill in bowl until solid and measure out the amount
  • 215 grams light brown sugar
  • 1 egg plus 1 yolk
  • 1 tsp. vanilla
  • 225 grams all purpose flour
  • ¾ tsp. baking soda
  • 1 tsp. kosher salt
  • 150 grams milk chocolate chips Use up to 200grams if you love them extra chocolatey
  • 150 grams dark chocolate chips Use up to 200grams if you love them extra chocolatey
  • Maldon sea salt flakes for garnish.

Instructions
 

  • Beat the brown butter and sugar just to incorporate.
  • Add egg, yolk, vanilla and combine.
  • Add dry ingredients.
  • Add chips.
  • Chill dough 30 mins.
  • Scoop out 50 gram balls and bake at 37510-11 mins.
  • Can also freeze the 50 gram and balls and bake from frozen. Just watch in the oven adding an extra 2-3 mins.
  • Sprinkle top with a drop of coarse sea salt out of the oven.
