Jemma's Blueberry Muffins

Ingredients
  

Topping

  • 45 g flour
  • 2 T. demerara sugar
  • 2 T. melted butter
  • ΒΌ tsp cinnamon
  • pinch of salt

Muffins...

  • 2 eggs
  • 320 g buttermilk
  • 70 g oil
  • 70 g melted butter
  • 270 g flour
  • 135 g caster sugar
  • 65 g soft brown sugar
  • 1.5 tsp baking powder
  • 150 g frozen blueberries

Instructions
 

Topping

  • Mix all in a bowl to form crumbles and set aside.

Muffins

  • Whisk together eggs, buttermilk, oil, butter. Combine well.
  • In another bowl, combine flour, sugars and baking powder.
  • Add blueberries.
  • Pour the dry ingredients into the wet and don't over mix, but combine.
  • Pour into cupcake liners and sprinkle on the streusel topping.
  • Bake 350 for 27 mins.
  • (When using my mini cast iron muffin pan, I preheated the pan and they baked 35 mins.)
