Jemma's Blueberry Muffins
Ingredients
Topping
- 45 g flour
- 2 T. demerara sugar
- 2 T. melted butter
- ¼ tsp cinnamon
- pinch of salt
Muffins...
- 2 eggs
- 320 g buttermilk
- 70 g oil
- 70 g melted butter
- 270 g flour
- 135 g caster sugar
- 65 g soft brown sugar
- 1.5 tsp baking powder
- 150 g frozen blueberries
Instructions
Topping
- Mix all in a bowl to form crumbles and set aside.
Muffins
- Whisk together eggs, buttermilk, oil, butter. Combine well.
- In another bowl, combine flour, sugars and baking powder.
- Add blueberries.
- Pour the dry ingredients into the wet and don't over mix, but combine.
- Pour into cupcake liners and sprinkle on the streusel topping.
- Bake 350 for 27 mins.
- (When using my mini cast iron muffin pan, I preheated the pan and they baked 35 mins.)
