Double Chocolate Peanut Butter Stuffed Cookies

Ingredients
  

  • 1 cup cold butter cubed
  • 1 cup light brown sugar
  • ½ cup granulated sugar
  • cup dark chocolate chips
  • cup peanut butter chips
  • ½ cup black baking cocoa
  • cup flour
  • 1 teaspoon cornstarch
  • ¾ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 eggs
  • 9 Tablespoons peanut butter 1 for each cookie
  • I weighed out eight 5-ounce cookies and had one 4-ounce cookie.

Instructions
 

  • Beat butter to break it up.
  • Add sugars and beat until crumbles, not creamed.
  • Add chocolate and peanut butter chips to combine.
  • Add dry ingredients and blend well until resembles sand.
  • Beat eggs and add, mixing until dough forms together.
  • Weigh into 5 ounce cookies.
  • I was able to form eight 5-ounce cookies and had one 4-ounce cookie.
  • Flatten the dough, adding peanut butter to the center and carefully fold the dough around it so it is all encased and doesn't leak out.
  • Bake at 400 12-14 mins on parchment lined jellyroll pans.
  • Let cool on sheet pan.
