Double Chocolate Peanut Butter Stuffed Cookies
Ingredients
- 1 cup cold butter cubed
- 1 cup light brown sugar
- ½ cup granulated sugar
- ⅔ cup dark chocolate chips
- ⅔ cup peanut butter chips
- ½ cup black baking cocoa
- 2½ cup flour
- 1 teaspoon cornstarch
- ¾ teaspoon baking soda
- ½ teaspoon kosher salt
- 2 eggs
- 9 Tablespoons peanut butter 1 for each cookie
- I weighed out eight 5-ounce cookies and had one 4-ounce cookie.
Instructions
- Beat butter to break it up.
- Add sugars and beat until crumbles, not creamed.
- Add chocolate and peanut butter chips to combine.
- Add dry ingredients and blend well until resembles sand.
- Beat eggs and add, mixing until dough forms together.
- Weigh into 5 ounce cookies.
- I was able to form eight 5-ounce cookies and had one 4-ounce cookie.
- Flatten the dough, adding peanut butter to the center and carefully fold the dough around it so it is all encased and doesn't leak out.
- Bake at 400 12-14 mins on parchment lined jellyroll pans.
- Let cool on sheet pan.
