Preheat oven to 400° degrees and line jellyroll pan with parchment.
In a mixer, beat butter and sugar until creamy.
Add eggs, one at a time.
Add vanilla and blend well.
Add cocoa and red coloring, combining.
Add the rest of the dry ingredients and the dough will form.
Mix in chips on low or by hand.
Chill in fridge at least 20 minutes.
Weigh out 6 ounces of dough and bake approx 13 mins. (Can shape into 2 balls like snowman if you want)
They will finish setting up as they cool on the cookie sheet.
Pro tip: Once removed from oven you can use a large cookie cutter ring to swing around them for a more perfect circle shape.
