Red Velvet Triple Chocolate Cookies

Ingredients
  

  • 1 cup cold salted butter cubed
  • cups granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1-2 tsp. red gel food coloring gauge the color as you add the gel
  • ¼ c. unsweetened cocoa powder
  • 1 tsp. baking soda
  • 1 tsp. cornstarch
  • ½ tsp. salt
  • 1 c. cake flour
  • c. all-purpose flour
  • 2 c. white chocolate chips I used Callebaut
  • 1 c. semi-sweet chocolate chips I used Ghirardelli

Instructions
 

  • Preheat oven to 400° degrees and line jellyroll pan with parchment.
  • In a mixer, beat butter and sugar until creamy.
  • Add eggs, one at a time.
  • Add vanilla and blend well.
  • Add cocoa and red coloring, combining.
  • Add the rest of the dry ingredients and the dough will form.
  • Mix in chips on low or by hand.
  • Chill in fridge at least 20 minutes.
  • Weigh out 6 ounces of dough and bake approx 13 mins. (Can shape into 2 balls like snowman if you want)
  • They will finish setting up as they cool on the cookie sheet.
  • Pro tip: Once removed from oven you can use a large cookie cutter ring to swing around them for a more perfect circle shape.
