Red Velvet Triple Chocolate Cookies
My husband said this was the best cookie he had ever eaten and my parents loved it, too! Give this one a try soon! You may also love Red Velvet Cheesecake.

Callebaut white chocolate-other chips will not melt like these, they are amazing!
Red Velvet Triple Chocolate Cookies
Ingredients
- 1 cup cold salted butter cubed
- 1½ cups granulated sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1-2 tsp. red gel food coloring gauge the color as you add the gel
- ¼ c. unsweetened cocoa powder
- 1 tsp. baking soda
- 1 tsp. cornstarch
- ½ tsp. salt
- 1 c. cake flour
- 1¾ c. all-purpose flour
- 2 c. white chocolate chips I used Callebaut
- 1 c. semi-sweet chocolate chips I used Ghirardelli
Instructions
- Preheat oven to 400° degrees and line jellyroll pan with parchment.
- In a mixer, beat butter and sugar until creamy.
- Add eggs, one at a time.
- Add vanilla and blend well.
- Add cocoa and red coloring, combining.
- Add the rest of the dry ingredients and the dough will form.
- Mix in chips on low or by hand.
- Chill in fridge at least 20 minutes.
- Weigh out 6 ounces of dough and bake approx 13 mins. (Can shape into 2 balls like snowman if you want)
- They will finish setting up as they cool on the cookie sheet.
- Pro tip: Once removed from oven you can use a large cookie cutter ring to swing around them for a more perfect circle shape.
