Cast Iron Skillet Potatoes

Ingredients
  

  • 2 T. olive oil
  • 2 T. butter
  • salt/pepper to taste
  • 2 pound baby potatoes cut in half
  • parmesan cheese freshly grated for garnish
  • handful parsley chopped
  • chives chopped

Instructions
 

  • Preheat oven 425
  • Season potatoes with salt/pepper
  • In a 12 inch skillet, heat oil and butter on medium.
  • Once hot, lay the potatoes in the pan.
  • Cook a few mins to brown.
  • Place in oven 20 minutes or until cooked through.
  • Top with fresh grated cheese and chives/parsley.
