Cast Iron Skillet Potatoes
You may need:

Cast Iron Skillet Potatoes
Ingredients
- 2 T. olive oil
- 2 T. butter
- salt/pepper to taste
- 2 pound baby potatoes cut in half
- parmesan cheese freshly grated for garnish
- handful parsley chopped
- chives chopped
Instructions
- Preheat oven 425
- Season potatoes with salt/pepper
- In a 12 inch skillet, heat oil and butter on medium.
- Once hot, lay the potatoes in the pan.
- Cook a few mins to brown.
- Place in oven 20 minutes or until cooked through.
- Top with fresh grated cheese and chives/parsley.
