Cast Iron Seared Filets With Compound Butter

Ingredients
  

Compound Butter

  • 8 T. soft butter
  • 6 cloves chopped garlic
  • chopped parsley plus any other herbs you like: chives, rosemary, etc
  • salt pepper

Steaks

  • 2-4 filet mignon steaks
  • 2 T. butter
  • 2 T. olive oil
  • salt/pepper

Instructions
 

Compound Butter

  • Mash butter with garlic,herbs, salt/pepper.
  • Roll into a log and freeze.
  • Cut slices when ready to serve steak.
  • Preheat oven 425.

Steaks

  • Season both sides generously with salt/pepper.
  • Preheat cast iron (large enough to fit your amount of steaks) until hot, over medium high.
  • Add oil and butter.
  • Add steaks and sea each side for 2 mins.
  • Place pan in oven until cooked to the internal temp you like. I aimed for 140 degrees.
  • Remove and top each with a slice of compound butter.
