Cast Iron Seared Filets With Compound Butter
Love restaurant house style steaks? Then you are going to LOVE this recipe! Cast iron steak is the best way to prepare your steaks. I particularly love topping it with compound butter! You can add any combo of herbs/garlic that you love. I like to add chopped garlic, rosemary, parsley and dill. I also like to make a side dish of green beans and definitely popovers!

Cast Iron Seared Filets With Compound Butter
Ingredients
Compound Butter
- 8 T. soft butter
- 6 cloves chopped garlic
- chopped parsley plus any other herbs you like: chives, rosemary, etc
- salt pepper
Steaks
- 2-4 filet mignon steaks
- 2 T. butter
- 2 T. olive oil
- salt/pepper
Instructions
Compound Butter
- Mash butter with garlic,herbs, salt/pepper.
- Roll into a log and freeze.
- Cut slices when ready to serve steak.
- Preheat oven 425.
Steaks
- Season both sides generously with salt/pepper.
- Preheat cast iron (large enough to fit your amount of steaks) until hot, over medium high.
- Add oil and butter.
- Add steaks and sea each side for 2 mins.
- Place pan in oven until cooked to the internal temp you like. I aimed for 140 degrees.
- Remove and top each with a slice of compound butter.
