Preheat the oven to 450° F.
Place olives, oil, garlic, shallots, lemons and Rosemary in a baking dish and bake 20-25 minutes until bubbly.
While that bakes, place the feta ingredients in a mixer and beat until smooth and creamy.
Scoop the feta into your serving dish and pour all of the olives on top!
Serve with crostini or pita crackers.
