Chewy Ginger Cookies

Ingredients
  

  • ¾ c. butter
  • ½ c. brown sugar
  • 1 c. granulated sugar
  • 1 egg
  • ¼ c. molasses
  • 2 ⅛ c. flour 270g
  • ½ c. rye flour 50g
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 1 ½ tsp. ground ginger
  • ½ tsp. ground cloves
  • 1 tsp. cinnamon

Rolling

  • bowl of sugar

Instructions
 

  • Preheat oven to 350.
  • Beat butter and sugars together until creamy.
  • Add egg and molasses.
  • Slowly add all the dry ingredients and beat until combined.
  • Chill dough at least 1 hour.
  • Scoop into balls using an ice cream scoop.
  • Roll in the sugar and lay on parchment paper.
  • Press down just gently on the tops.
  • Bake 10-13 mins.
