Chewy Ginger Cookies
Ingredients
- ¾ c. butter
- ½ c. brown sugar
- 1 c. granulated sugar
- 1 egg
- ¼ c. molasses
- 2 ⅛ c. flour 270g
- ½ c. rye flour 50g
- 1 tsp. salt
- 2 tsp. baking soda
- 1 ½ tsp. ground ginger
- ½ tsp. ground cloves
- 1 tsp. cinnamon
Rolling
- bowl of sugar
Instructions
- Preheat oven to 350.
- Beat butter and sugars together until creamy.
- Add egg and molasses.
- Slowly add all the dry ingredients and beat until combined.
- Chill dough at least 1 hour.
- Scoop into balls using an ice cream scoop.
- Roll in the sugar and lay on parchment paper.
- Press down just gently on the tops.
- Bake 10-13 mins.
