Sausage and Spinach Quiche

Ingredients

box puff pastry
defrosted and each rectangle rolled out larger to fit 9 inch springform pan.
Filling

ricotta cheese
1
package sweet Italian sausage
baked 20 minutes (not fully cooked) and sliced

ounces
mozzarella cheese
10
ounces
frozen chopped spinach
defrosted and well drained
1
red pepper
chopped
salt/pepper to taste
6
eggs
Egg wash
1
beaten egg
Instructions
Spray 9 inch springform with Pam.
Preheat oven to 400.
Lay one rolled out puff pastry into the pan.
Filling
Mix all and pour into the bottom crust.
Top with second puff pastry and seal edges.
Brush top with egg.
Bake 1 hour.
Cool before slicing.
