Sausage and Spinach Quiche

Ingredients
  

  • 1 box puff pastry defrosted and each rectangle rolled out larger to fit 9 inch springform pan.

Filling

  • 10 ounces ricotta cheese
  • 1 package sweet Italian sausage baked 20 minutes (not fully cooked) and sliced
  • 16 ounces mozzarella cheese
  • 10 ounces frozen chopped spinach defrosted and well drained
  • 1 red pepper chopped
  • salt/pepper to taste
  • 6 eggs

Egg wash

  • 1 beaten egg

Instructions
 

  • Spray 9 inch springform with Pam.
  • Preheat oven to 400.
  • Lay one rolled out puff pastry into the pan.

Filling

  • Mix all and pour into the bottom crust.
  • Top with second puff pastry and seal edges.
  • Brush top with egg.
  • Bake 1 hour.
  • Cool before slicing.
