Drizzle 1 T. olive oil on chicken and season with salt, pepper, garlic, paprika. Toss in the cornstarch.
Heat a large skillet over medium high heat and cook the bacon until crisp.
Remove bacon and drain it on paper towels.
Add chicken to the bacon grease in pan and sear 5 mins each side.
Remove to a plate.
Add the remaining 1 tablespoon olive oil.
Sautee onion 5 mins.
Add the butter, corn and garlic.
Cook 5 mins.
Add wine and 1/2c. water.
Add heavy cream and parmesan and let it warm through.
Top with chives and bacon!
