Creamy Bacon Corn Chicken
Hands down the best chicken dinner EVER! Hubby has been raving for hours! I highly suggest you make this ASAP!!! You may also love Chicken Quesadillas and Florentine Butter Chicken with Fresh Mozzarella, Burst Cherry Tomatoes and Crispy Shallots.
Creamy Bacon Corn Chicken
Ingredients
- 1 ½ pounds boneless skinless chicken thighs
- 2 T. olive oil
- kosher salt and pepper
- garlic powder
- paprika
- ¼ cup cornstarch
- 4 slices thick cut bacon chopped
- ½ yellow onion chopped
- 2 T. butter
- 4 ears corn kernels removed from cob
- 4 cloves garlic chopped
- ¾ cup white wine
- ½ cup heavy cream
- ½ cup shredded parmesan cheese
- fresh chives chopped
Instructions
- Drizzle 1 T. olive oil on chicken and season with salt, pepper, garlic, paprika. Toss in the cornstarch.
- Heat a large skillet over medium high heat and cook the bacon until crisp.
- Remove bacon and drain it on paper towels.
- Add chicken to the bacon grease in pan and sear 5 mins each side.
- Remove to a plate.
- Add the remaining 1 tablespoon olive oil.
- Sautee onion 5 mins.
- Add the butter, corn and garlic.
- Cook 5 mins.
- Add wine and 1/2c. water.
- Add heavy cream and parmesan and let it warm through.
- Top with chives and bacon!
