Chocolate Pumpkin Cheesecake

Ingredients
  

Crust

  • 24 whole Oreos crushed in a bag or food processor
  • 6 T. melted butter

Cheesecake

  • 24 ounces cream cheese softened
  • 1 15-oz. can pumpkin puree
  • 4 eggs
  • ¾ c. sugar
  • ½ c. packed light brown sugar
  • ¼ c. sour cream
  • 2 tsp. vanilla extract
  • 2 T. flour
  • 1 tsp. pumpkin pie spice
  • ½ tsp. ground cinnamon
  • ¼ tsp. kosher salt

Garnish

  • ¾ c. milk chocolate chips melted

Instructions
 

  • Preheat oven to 350º

Crust

  • Mix Oreos and butter together.
  • Press into 8 inch greased springform pan. Wrap outside of pan and bottom with foil.

Cheesecake

  • Beat cream cheese until smooth.
  • Add pumpkin, eggs, sugars, sour cream, vanilla, flour, pumpkin pie spice, cinnamon and salt.
  • Beat well until smooth.
  • Pour on top of crust.
  • Place pan in a larger baking dish. Place on oven rack and pour in enough boiling water to reach halfway up the pan.
  • Bake about 1 hour 15 minutes.
  • Turn oven off, prop open oven door, and let cheesecake cool in oven, 1 hour.
  • Remove from foil and chill overnight.
  • Drizzle with melted chocolate chips when serving.
