Chocolate Pumpkin Cheesecake
Ingredients
Crust
- 24 whole Oreos crushed in a bag or food processor
- 6 T. melted butter
Cheesecake
- 24 ounces cream cheese softened
- 1 15-oz. can pumpkin puree
- 4 eggs
- ¾ c. sugar
- ½ c. packed light brown sugar
- ¼ c. sour cream
- 2 tsp. vanilla extract
- 2 T. flour
- 1 tsp. pumpkin pie spice
- ½ tsp. ground cinnamon
- ¼ tsp. kosher salt
Garnish
- ¾ c. milk chocolate chips melted
Instructions
- Preheat oven to 350º
Crust
- Mix Oreos and butter together.
- Press into 8 inch greased springform pan. Wrap outside of pan and bottom with foil.
Cheesecake
- Beat cream cheese until smooth.
- Add pumpkin, eggs, sugars, sour cream, vanilla, flour, pumpkin pie spice, cinnamon and salt.
- Beat well until smooth.
- Pour on top of crust.
- Place pan in a larger baking dish. Place on oven rack and pour in enough boiling water to reach halfway up the pan.
- Bake about 1 hour 15 minutes.
- Turn oven off, prop open oven door, and let cheesecake cool in oven, 1 hour.
- Remove from foil and chill overnight.
- Drizzle with melted chocolate chips when serving.
