Puff Pastry Pot Pie

Ingredients
  

Pot Pie Filling

  • 4 carrots steamed and chopped
  • ½ c. peas
  • ½ c. corn optional
  • 1 pound chicken grilled with salt/pepper and cut into small pieces
  • asparagus cut into bite sized pieces, optional
  • 4 T. butter
  • ¼ c. flour
  • 2 c. chicken broth
  • 2 T. heavy cream

Puff Pastry

  • 1 box puff pastry

Instructions
 

  • In a pot, melt butter and sprinkle in flour.
  • Stir very well to combine and cook 1 minute.
  • Add chicken broth and heavy cream.
  • Stir to combine and simmer on low to thicken a bit.
  • Stir in the carrots, peas, asparagus, corn kernels if using and chicken.
  • Add salt/pepper to taste.
  • Serve alongside puff pastry!
