Preheat oven to 400!
Line jellyroll pan with nonstick foil
Brush butter onto the ears of corn with pastry brush.
Very generously season your corn with kosher salt and pepper.
Sprinkle on the chipotle.
Roast for 30-40 minutes, or until starting to brown!
While it's cooking, turn the corn occasionally.
Remove from oven, add lots of cheese and a cube of butter!
